You won’t want to limit tacos to just Tuesday with these! Have summer flavors year-round with our beachy Tilapia Tequila Tacos. There’s something special about these, we’re not not just talking about the Special Sauce.

Ingredients:
1 pound tilapia fillets
1 cup cilantro, chopped
¼ cup silver tequila
¼ cup fresh lime juice (about 2 limes)
2 cloves garlic, chopped
Paprika
Cumin
Salt and pepper to taste
8 corn tortillas
Sir Kensington’s Special Sauce
Sunflower oil, or other high heat cooking oil, to coat grill or pan
Suggested toppings: Chopped cabbage, onions, cilantro, avocado, lime wedges

Directions:
1. Cut fish into 2-inch pieces. Combine chopped cilantro, tequila, lime juice, chopped garlic, and tilapia in a bowl. Cover and marinate for 20 minutes.
2. Remove fish from marinade and season with paprika, cumin, salt, and pepper. Brush oil on grill or pan. Sear fish on medium high heat for 3–4 minutes on one side. Flip and cook for additional minute. Remove fish from heat.
3. Warm up corn tortillas on grill or pan. Serve with your choice of toppings and Sir Kensington’s Special Sauce.

Pro Tip: Swap in another flaky white fish like halibut, hake, or dogfish. Look out for sustainable fish options at your local fish market!
