If it comes out of a process (canning, deep frying, restaurant service) it doesn’t count as a vegetable. So you look at the arbitrary advice of your national health mavens and say (in my case) “Five-a-day is a guideline, an average. I ate six clementines today, I’m in credit for tomorrow.”
