This gets at one huge challenge that I personally feel like deserves more attention: how to make healthier foods more affordable for low-income folks?
One of the more interesting pieces I remember reading on NPR was a business model experiment: Same Meals, Different Prices based on geographic placement of healthy food joints (using wealthier areas to offset costs for low-income areas). Wonder if there are some more product-oriented approaches out there that tackle this same problem?
