Gone are the days when pizza was an Italian cuisine. Indians have accepted it, twisted it and made it their own. The Paneer-tikka pizza we get outside our college is one of the most delicious things I have ever tasted. Many Restaurants offer pizzas with chicken gravy, dals, Indian vegetables or hot Indian curries; some also offer dosas as Pizza- base!
Cheese is a very important ingredient in pizza and Indians are milk-product lovers so they love pizzas with cheese, cheese and even more cheese. While mozzarella, provolone, cheddar and parmesan are mainly used for pizzas worldwide, mozzarella is the most popular cheese in Indian kitchens (after cottage cheese of-course; or as we love to call it, ‘paneer’)
You can experiment with pizza making and make it in your own signature style. An aunt of mine uses ghee in pizza base and another uses mango pickle on its base!!!
These creations are really innovative and create what I call an Indian pizza.
As a child I loved eating bread pizza, an easy to make pizza which uses bread as base and requires only cheese, tomato ketchup and potatoes. Another favourite is chaat pizza which has toppings of pizza on a sev puri. I find these bite-sized pizzas a great stress-buster and they are a blessing when an unexpected guest needs to be served.
I think best way to enjoy pizzas is to make them yourself. The next time you are alone, calls some friends over, get some pizza base, veggies and cheese and try to create your own special pizza!
Trust me you will have a fun filled, creative and thrilling time and more importantly a happy tummy afterwards!
