It just delicious, my grandfather is from Albacete (Castilla la Mancha) and he always used to make us this delicious dish. My mum also makes it very often.

One of the best things about pisto manchego is it is very healthy, the mix of the vegetables (courgette, peppers, onions with tomato sauce makes it so tasty and you can accompany it with lots of things such as rice, fried eggs, in toast, with Spanish omelette, with a fillet… However, my favourite way is with fry eggs.

Is also very easy to make as it doesn’t take a long time to cook it, and the flavour and texture is unique.

INGREDIENTS 4Pax:

- Chopped tomatoes (tin)

- 1 Clove of garlic

- 1 Onion

- 1 Courgette

- 2 Peppers (red and green)

- Shoot of white wine (optional)

- Salt, pepper

- Olive oil

METHOD:

- Chopped the garlic

- Chopped the onions, courgette and the peppers in medium cubes (mirepoix)

- In a pan with olive oil put first the garlic, then add the onion and peppers cook few minutes in the medium heating.

- Add the courgette, season it with salt and pepper and add the white wine, cook for about 10 min

- When everything is nearly cooked add the chopped tomatoes and cook for 5–10 min more.

- Served with a toast or rice or fry eggs…
