Fresh Sambhar

Sambhar served with Idly, Rice, Butter Milk, Ghee, Papad and Avakaya Pickle

Sambhar is a great dish to eat on any day of the week. It can be made in a number of ways. Here I will take you through the process of making it with fresh spices and not with powder.

There are two steps of making this Sambhar.

First is to make the paste. And the second is to make the Sambhar from that paste.

Step 1- Making the paste.

Ingredients:

  1. Fenugreek seeds- 1 Tsp
  2. Coriander seeds- 1/3 cup
  3. Chana dal- 1/6 cup
  4. Toor dal- 1/12 cup
  5. Udad dal- 1/12 cup
  6. Red Chllies- 3 Nos
  7. Water as required

Method:

  1. First put all the dry ingredients in a bowl and soak them all in water for 45 minutes to 1 hour.
  2. When the Fenugreek seeds become soft the ingredients are ready to be put in a grinder.
  3. Grind all the ingredients smoothly in a Mixer Grinder and transfer the contents into a glass jar or any other vessel.
  4. The paste so made can be stored in refrigerator for upto a week or 10days by adding a small amount of salt.

Step 2- Making the Sambhar

Ingredients for the Sambhar

  1. Sambhar paste- 2–3 Tbsp
  2. Vegetables- Onion, Okra, Carrot, Capsicum, Drum Sticks and any other vegetable of your choice
  3. Tamarind- 1/3 cup (Soak it in hot water)
  4. Fresh coconut- 1/2 cup
  5. Oil- 1–2 Tbsp
  6. Spices- Turmeric, Mustard seeds, Asafoetida
  7. Red chillies- 1–2 Nos
  8. Curry leaves
  9. Water
  10. Salt as required

Method of preparation:

  1. Take a heavy bottomed pot and put some oil in it. Let the oil heat up before putting the spices.
  2. Put Turmeric, Mustard seeds (let them splutter), Red chillies, Asafoetida and curry leaves in the oil.
  3. Once they are nicely fried, put onions and okra in the oil and fry them.
  4. After the onions and okra are fried, put the other veggies and let them cook.
  5. Now add the tamarind pulp to the veggies and let them boil.
  6. After the tamarind pulp starts boiling add the Sambhar paste that we made.
  7. Add coconut as well and mix everything thoroughly.
  8. Add water for consistency and finally add salt as required.
  9. Taste the sambhar before serving (in case of any modifications).
  10. Additional step (not shown in the video)- To thicken the Sambhar, we can add some cooked toor dal.

Voila! The Sambhar is ready. Do enjoy with rice, idly, vada, dosa or eat it as such.
