Creative Experimentation: 
The cookie I came up with was inspired by french macarons. I made a macaron inspired cookie top and made them the size of a standard cookie. I added a little bit of yellow food coloring. For taste, I wanted something light and refreshing that encapsulated the idea of a macaron so I made them lemon and coconut.

Final batch of cookies

– 2 cups of confections sugar
– 1.5 cups of almond flour
– 5 medium egg whites
– 1/8 tsp of cream of tartar
– 1/2 cup of sugar
– 1/4 tsp of vanilla extract
– 1/4 tsp of coconut extract
– coconut flakes and lemon zest added in to bake

Final cookies before put in oven.

Idea Test 1:
My first idea was the same cookie but different flavoring. Instead of coconut extract and flakes in my first batch, I used lavendar extract. Unfortunately, those cookies ended up tasting like fancy soap from a spa.
