I agree — and that’s the part of the process that I’m hesitant to suggest should be compressed. It’s a special activity. Perhaps the focus should be more on the work that happens before the magic in the kitchen. Or perhaps we distinguish between the days when we have time to making cooking an event and the days where we’re more pressed for time.
