How I find peace and connect with my soul by eating Pho soup

I have found a truth: one that feeds my soul and composes it. That to me is called Pho.

It all began that day when, for the first time, I stepped on Sunnyvale, California, the so-called Silicon Valley. I was eager to eat! A small blue eatery, triangular shaped, very welcoming and full of people showed up. Loyal to my philosophy of embracing the unknown, I picked a restaurant so unfamiliar to me and gave it a shot. I could have never imagined what I would discover in a Vietnamese restaurant and how it would shape my mindset.

Somehow, I introduced myself and made my way to a table using amateur sign language, which at that time was better than my indigent English. As I entered, I couldn’t see any familiar faces between the Vietnamese, Phillipino, White and Mexican people feasting around me. I received the menu with wonder. After I opened it, I realized it was written in Vietnamese and English, languages completely foreign to me.

I can say with confidence that new, rare, and unfamiliar food has always been a part of my life. I clearly remember from my childhood, my family and I were eating animal parts and recipes that could make some of my friends (especially those from Europe) feel a bit…dizzy, to say it politely. Chicken blood, heart, pork and chicken feet, snake, frog, brain, guinea pig, balls, ears and lamb head are just some elements that we tend to use in everyday Peruvian food.

When the waitress came back, I knew I had to follow my gut and choose what seemed delicious to eat. Rapidly, my eyes and my fingers landed on a picture of Pho. I decided to order it. Honestly, my first time was not the best. I had to learn how to appreciate this kind of food, slowly. Eating large noodles, meat and wiggly tendons with chopsticks and a big spoon, was not my strength at that time. The contentment of eating your favorite food was definitely missing.

After visiting a few Pho restaurants around the city and learning from my Vietnamese friends, I was equipped with the skills to let every bite, juice and smell to reach my soul, touch it and fix it. It became my source of truth, a part of me and an extension of my mind. And now the concept of Pho and its meaning became part of my every-day motivation to keep going. I can’t live without it and I will seek for it anywhere I am in the world and in every place Destiny takes me. This time is in Beijing at Pho La La (幸福中路55号杰座大厦2楼). I spent 40.00 RMB and its value greatly surpasses its price.

Within the idea of Pho, I am able to find peace, calmness and the necessary elements to lift my spirit, connect my body to my sould and get ready for tomorrow in the pursuit of my dreams. Thinking of Pho is like feeling infinite peace in a finite period of time, while Pho lasts in the bowl.
