A close female friend of mine who was a server for years at both upscale and downscale places in Pittsburgh, PA told me that the meaner she was & bitchier she was toward customers while delivering great attentive service, the better tip she got. On the flip side, once when she and I were visiting Washington, DC and having dinner at an outdoor table at Kramer Books & Afterwards near Dupont Circle. We were receiving HORRIBLE service with not a single apology from a pretentious male server who maintained a snooty tone toward us. At the end of the meal she tipped him $3.00 on a check well over $100.00. As we were walking away he literally chased us down the street & with an even snootier tone informed us that the customary tip in Washington is a minimum 20%. She then said: “Please let me see that tip.” She then grabbed it from his hand and we both ran from him screaming with drunken laughter. She then confided in me that she did that in hopes of teaching him to be a better & more professional server. Like I said, she was a real pro as a server, a quite loving person, and was just dishing out some tough love that evening.
