I think you might have understood the wrong UX. Check out a youtube video by Don Norman explaining what exactly UX is. The core of UX is to listen to your customer and “guess” what they really want. That act is exactly what you referred as figuring out what the market wants. You still can iterate and get your idea tested. I think the problem is many people got caught up by the process, not the essence of UX. You should find a good UX person to help you.
