That was very brave of you, to attempt that for your in-laws, even if it didn’t go as planned.

That DOES look delish in the picture. I’ve always wanted to try that recipe, but I think I’ll take your word for it. As much as I love zucchini, I don’t like it heated in big pieces. For me, it has to be sliced thin and battered or disguised in some kind of bread or soup.

I love fake fried zucchini. The batter is make from parmesan cheese and ground oats, then it’s baked in olive oil. It’s not quite as good as the deep fried stuff, but it’s satisfying. I can look for the recipe, or you could probably find it online, if you’re interested.

I’m a little envious of your abundance of zucchini. I haven’t had much luck with them. My husband has suddenly taken an interest in veggie gardening, though, and it turns out he’s pretty good at it, so little by little we’re expanding our food crops. He keeps them alive while I focus on the flowers…as it should be. Zucchini is definitely on the list for next year, though.
