Partisans with incentive to subvert election results have direct physical access to equipment — many of them are State elections administrators. Malware in the wild is known to be capable of “hopping air gaps” on assumed disconnected machines. Lack of direct Internet connections to these systems has nothing to do with actual elections security or auditability.
