Huevos Rotos (Broken Eggs) is a popular Spanish dish of fried potatoes, chorizo sausage or jamón, and perfectly fried eggs. It is typically served for lunch or dinner, but can be enjoyed at any time of day.

Ingredients:

  • 1 pound new or baby potatoes, quartered
  • 1 small red or yellow onion, roughly chopped
  • 2 teaspoons smoked Spanish paprika
  • Kosher salt and freshly ground black pepper
  • 1/3 cup extra-virgin olive oil
  • 4 slices jamón serrano or prosciutto, torn into pieces
  • 1/4 to 1/3 cup extra-virgin olive oil
  • 4 large eggs
  • 1 tablespoon finely minced fresh flat-leaf parsley
  • 1/2 teaspoon crushed red pepper flakes

Instructions:

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Spread the potatoes and onions on a baking sheet and season with the smoked paprika, 1 teaspoon pepper, and salt to taste. Drizzle with the olive oil and roast until the potatoes are tender and golden, 15 to 20 minutes.
  3. Meanwhile, heat a small nonstick skillet over medium-high heat and coat the bottom with the olive oil. Add the jamón or prosciutto and cook until browned and crispy, about 2 minutes per side. Remove from the pan and set aside.
  4. In the same skillet, fry the eggs over medium heat until the whites are set and the yolks are still runny, about 3 minutes per side.
  5. To assemble, divide the roasted potatoes among individual serving plates or bowls. Top with the jamón or prosciutto, fried eggs, parsley, and red pepper flakes. Serve immediately.

Tips:

  • For extra-crispy potatoes, parboil them in salted water for 5 minutes before roasting.
  • If you don’t have smoked Spanish paprika, you can use regular paprika, but it won’t have the same flavor.
  • To test if the eggs are done, gently press on the yolk with your finger. If it is still runny, cook for a bit longer.
  • Serve with a side of crusty bread to soak up all the delicious juices.
