Summer is still on, which means there’s still time to savor seasonal favorites like beloved frozen freezer treats. In England, you’d call it an “ice lolly” and in Ireland you’d whip up a batch of “freeze pops,” but in the USA, we know them by the popular brand name Popsicle® or the more generic ice pop.
As the story goes, a young Frank Epperson left a glass filled with water, powdered soda mix, and a wooden stick for stirring outside overnight in 1905. When the 11-year-old Oakland, CA boy awoke the next day, he found a liquid treat frozen with a stick for easy eating. Thus, the Eppsicle, and later Popsicle, was born.
This summer has been all about the matcha ice pop, but with Earl Grey being one of the most popular tea blends out there, it’s a perfect tea for infusing in this classic summer treat. Earl Grey, with its hints of bergamot oil, is most commonly enjoyed with cream and a bit of sweetener to create the Earl Grey Creme or Earl Grey Latte. In some circles, it’s also known as a London Fog.

Ingredients
- 1 cup heavy cream (or coconut milk*)
- 1 Tbls honey, maple syrup, or agave
- 1 tsp vanilla
- 5 grams loose leaf Earl Grey tea
- 8 ounces water
Steps
- Brew your loose leaf Earl Grey in 8 ounces water at 185–190 degrees Fahrenheit for 5–6 minutes to create a strong brew.
- Cool the tea for about 20 minutes.
- Mix together the heavy cream, liquid sweetener, vanilla, and the cooled Earl Grey tea.
- Pour the mixture evenly into six popsicle molds.
- Freeze and enjoy!
Note: Depending on the type of coconut milk you use, you may experience some separating and/or ice crystals forming in the popsicle. We recommend experimenting with different brands to find one that creates a consistent creamy look when frozen.
