Fiji Style BBQ — with Aussie sides

Ingredients:

  • BBQ lamb chops
  • Bite sized chicken pieces (skewered)
  • Soy sauce
  • Garlic-ginger paste
  • Chillies
  • Pinch of sugar
  • Oil
  • Potatoes
  • Lemon
  • Lettuce
  • Salt
  • Pepper
  • Butter
  • Mint

Method:

  • Make a marinade with soy sauce, ginger-garlic paste, chillies, sugar and oil (the amount of each ingredient depends on your taste and the amount of meat you use)
  • Place the marinade and the lamb pieces in a large bowl and coat generously. Then put the mixture into a large zip-lock bag and refrigerate overnight for best results
  • Repeat the above steps for the chicken kebabs
  • For the mashed potatoes: Boil the potatoes (a pressure cooker will quicken the process). While hot, add butter, salt and pepper to your taste and mix well (you may add some milk to soften the mixture)
  • To garnish: Shred lettuce, half a lime and sprinkle mint leaves onto a serving plate with the meat pieces and mashed potatoes
