Recipe for Masala Chai

Ingredients:

  • 1cm piece ginger
  • 1 1/2 tbsp loose tea leaves
  • 3–4 cloves
  • A small piece of cinnamon bark (dalchini)
  • 1litre hot water
  • 7–10 cardamom shells or 1tsp cardamom powder (elaichi)
  • 2tbsp powdered milk dissolved in water
  • Sugar to taste

Method:

  • Crush/grate ginger (with the skin on, wash thoroughly)
  • Add the tea leaves, cloves, cinnamon and cardamom shells (powder must be added in the end) and sugar
  • Pour in the hot water and turn on the heat to medium
  • Boil the tea for a good 5 minutes to let the flavours infuse
  • Add in the milk mixture and lower the heat to avoid the tea from overflowing
  • Simmer for 2 minutes and add in the cardamom powder (if you have not put in the shells)
  • Strain the contents into a mug and sip it up slowly
