Beef Stir Fry w/ Autumn Snow Peas

Autumn is upon us, and with the cool season approaching, some of my FAVORITE veggies are in-season right now. By far snow peas (sugar peas) rank extremely high.


Recipe: Beef Stir Fry w/ Whole Snow Peas


Ingredients

  1. 1 pack of lean beef (top round flat)
  2. 2 large carrots
  3. 1 whole celery stalk
  4. 1 bell pepper
  5. fresh snow peas

Method

Take your top-round flat, slice it AGAINST THE GRAIN into strips. (Youtube why cutting against the grain is so important)

Place the stripped beef inside a bowl and add your spices and oils, horse radish and set it aside to marinate for 30 minutes. (marinade to taste, please)

Cube (or baton) your two carrots, celery and your bell pepper and rinse. Set aside. The technique here is to create a mise en place so all your ingredients will be ready for the pan. “A stir fry is on and off the heat quickly then serve.”

Ok, now back to the beef, time to heat your sauté pan to high, add spray w/ a little Avocado Oil and par-cook the beef — ON HIGH HEAT. Brown the beef and set aside.


In the same sauté pan, remove the beef, use the excess oil to sauté the veggies together. As the veggies are sautéing, add your For Veggie Lovers Spice Blend now reintroduce the beef to finish cooking to complete the dish. Serve hot. Enjoy.
