Monday Check In

Friday: Went out for lunch at work ($10) and otherwise had a really good day — it reminded me how lucky I am to have a great boss and coworkers and projects I enjoy. Went home and Skyped with a friend and otherwise introverted hard-core.

Saturday: Lazed around in the morning, went to the library where I picked up Difficult Women by Roxane Gay and Hiding in Plain Sight by Nuruddin Farah. Difficult Women was on hold forever, but I’m halfway through it and it was worth the wait! Then I spent $25 at the grocery store and made a big batch of black bean quesadillas, some for lunch this week and some to freeze. Went to a friend’s apartment to watch a movie and then out for drinks with another friend ($3 for a Sprite). She’s leaving to hike the Appalachian Trail this week, and I’m half jealous/half happy to follow her travels on Instagram from the comfort of the great indoors.

Sunday: More lazing, cleaned the apartment (Why can’t I make myself do dishes during the week?). I tried to go ice skating again, but it was too warm so I just went for a walk in the park instead — the weather was gorgeous. I made Sheet Pan Sweet and Sour Chicken for dinner (https://www.budgetbytes.com/2017/01/sheet-pan-sweet-sour-chicken/) but with a fried egg on top instead of chicken. It turned out pretty well, but I might tweak the sauce a bit next time (more ginger and soy, less vinegar perhaps?)

Total: $38 (lower than estimate, yay!)
