For what concerns startups looking for a product/market fit, I would advise to implement a minimum viable product (MVP) on one platform and iterate on this platform (e.g. iPhone or Android depending on your product and target). To avoid misunderstanding: to me, a MVP is a great execution of a super focus and simple product with a very limited set of features.

About your examples of “famous” Apps moving from hybrid to native: I believe it’s related to the natural (and slow) process of understanding the limitations of hybrid Apps. And probably one day, they realized they had to shoot for 4.5 or 5-star ratings on the Stores instead of 3 ;-)
