Recipe for a delicious and easy Thai-inspired stir-fry with winged beans

Ingredients

* 1 pound fresh winged beans, trimmed and sliced into 1-inch pieces
* 2 tablespoons vegetable oil
* 3 cloves garlic, minced
* 1 tablespoon minced ginger
* 1 red chili pepper, thinly sliced (seeds and ribs removed for less heat)
* 1/4 cup coconut milk
* 2 tablespoons fish sauce
* 1 tablespoon lime juice
* 1 tablespoon sugar
* 1/4 cup chopped fresh cilantro

Instructions

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the garlic, ginger, and chili pepper and cook for 30 seconds, or until fragrant.
3. Add the winged beans and stir-fry for 3–4 minutes, or until they are slightly tender.
4. Stir in the coconut milk, fish sauce, lime juice, and sugar.
5. Bring to a simmer and cook for 2–3 minutes, or until the sauce has thickened slightly.
6. Stir in the cilantro and serve immediately.

Tips

* For a spicier stir-fry, leave the seeds and ribs in the chili pepper.
* You can also add other vegetables to this stir-fry, such as sliced bell peppers, carrots, or onions.
* Serve this stir-fry with rice or noodles.
