Recipe for a tropical mixed fruit jam combining the flavors of passion fruit, kumquat, star fruit and banana

Ingredients:

- 4 passion fruits
- 8–10 kumquats
- 2 star fruits
- 2 ripe bananas
- 2 cups granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon grated ginger (optional)

Instructions:

1. Prepare the fruits: Cut the passion fruits in half and scoop out the pulp. Slice the kumquats and remove the seeds. Remove the skin from the star fruits and dice them. Peel and mash the bananas.
2. In a large saucepan, combine the prepared fruits with sugar and lemon juice. If using ginger, add it now.
3. Cook the mixture over medium heat, stirring frequently to dissolve the sugar. As the fruits soften, mash them slightly with a potato masher or the back of a spoon.
4. Once the mixture starts to thicken, reduce the heat to low and simmer for 30–40 minutes, or until the jam reaches the desired consistency. Stir occasionally to prevent sticking.
5. To test if the jam is ready, place a small amount on a chilled plate. If it thickens and doesn’t run easily, it’s done.
6. Once the jam is ready, remove it from the heat and let it cool for a few minutes.
7. Pour the jam into sterilized glass jars, leaving a little space at the top. Seal the jars tightly.
8. If you want to store the jam for a longer period, you can process the jars in a hot water bath for about 10–15 minutes.
9. Let the jars cool completely before storing them in a cool, dark place.

This tropical mixed fruit jam can be enjoyed on toast, scones, or as a topping for yogurt and ice cream.
