Vegan Papaya Fritters

Ingredients:

* 1 cup self-rising flour
* 1/2 cup plant-based milk
* 1 tablespoon Thai curry paste
* 1 teespoon sugar
* 1 cup papaya, peeled and julien ruffled
* Oil for frying

**Instructions:**

1. In a medium bowl, whisk together the flour, Thai curry paste and sugar until smooth.
2. Stir in the papaya strips.
3. Heat a generous amount of oil in a large frying pan or wok over medium heat.
4. Drop the batter by spoonfuls into the hot oil and fry for 1–2 minutes per side, or until golden brown and crispy.
5. Remove the fritters from the oil and drain on paper towels.
6. Serve immediately with your favorite dipping sauce, such as soy sauce, vinegar, or sweet chili sauce.

**Tips:**

* For extra crispy fritters, use ice-cold plant-based milk.
* Don’t overcrowd the pan when frying. Fry in batches if necessary.
* Serve the fritters immediately for the best flavor and texture.
