Roasted Butternut Squash

Yummy Paleo and Vegan Butternut Squash Bites.

What a perfect way to welcome fall. This is the first time I tasted Butternut Squash and I absolutely loved it.

Well any Tom, Dick or Harry can make these super delicious Butternut Squash bites. Just mix all the ingredients together and pop it in the oven. Isn’t it awesome…

Not to forget Butternut Squash have a lot of nutritional benefits too. Low in fat, Butternut Squash serves an ample dose of dietary fiber, making it an exceptionally heart friendly choice. It also provides significant amounts of potassium important for bone health, Vitamin B6 essential for the proper functioning of the nervous and the immune system, folate which helps guard against brain and spinal cord related birth defects, carotenoids and vitamin C which helps guard against Macular degeneration and breast cancer.

One of the other cool things about this recipe, other than it being super easy, it has turmeric in it which has amazing health benefits too.. one of it being its anti inflammatory property.

I guess it’s a perfect side dish for a Thanksgiving meal. This is definitely on my menu this Thanksgiving…😊

Roasted Butternut Squash

Prep time 10 mins

Cooking time 35 mins

Yields 6 servings


3 pounds( 8cups)Butternut Squash, peeled, deseeded and cut into 1 inch cubes

2 tbsp extra virgin olive oil

2 tsp smoked paprika

3/4 tsp salt

1/2 tsp turmeric powder

1/2 tsp garlic powder


  • Preheat oven to 375F
  • Toss Squash with oil,smoked paprika,turmeric powder, salt and garlic powder in a large bowl to coat.
  • Spread out on a large rimmed baking sheet.
  • Roast in the oven stirring once or twice in between, until the Squash is tender and starting to brown on spots for around 35 to 40 minutes.
  • Enjoy!!!
