Guilt free dessert: Skinny Strawberry Yogurt Treats

It’s summer time, the perfect time to have lots and lots of ice creams, sorbets,milkshakes,granitas….(my list is never ending). This time of the year you really want to have something chilled and yummy.

Now a days as I am on a diet, most of the time I am searching for some dessert recipe which is healthy so that there is no guilt trip after Indulging in it and tasty which satisfies my sweet tooth. Well I got that in these skinny yoghurt treats.

I love ice cream sandwiches and the taste of these yogurt treats gives the feeling that you are having a strawberry ice cream. Sandwich…. What more can you ask for???? However you can use this same recipe without the strawberry, as the base and make so many different variations. You can also add some seasonal fruits or some berries or lime,different extract, choco chips etc….. Doesn’t it sound exciting!!! I am sure you will enjoy every bite of this ice cream sandwich….

Well while making these treats I used the plastic wrap to make sure the filling stays on top of the crackers but still had some issues with it. I would suggest an aluminum foil rather than a plastic wrap or wax/parchment paper. Also the biggest mistake I did was ,I did not let the filling sit in the freezer for some time before pouring it in to the pan. Due to that my mixture was a little loose and it did seep beneath the crackers especially at the edges. So trust me and let it thicken up.

My husband who loves eating ice cream did not even come to know that it’s not an ice cream but a yoghurt …Isn’t that super cool😉. The best part is that by using yoghurt and a lite whipped topping you can significantly cut down on the fat and sugars and absolutely no compromise on the taste.

Skinny Strawberry Yoghurt Treats

Prep time 10 mins

Cooking time 20 mins

Makes 9 yoghurt treats

Ingredients

8 ounce of low fat Greek yogurt ( you can also use low fat vanilla yoplait yogurt)

4 ounce of Cool whip lite

Vanilla essence 1 tsp

Strawberry chopped 1 cup

Graham crackers 9 whole or 18 halves

Method

  • Stir together Greek yogurt, whipped cream, vanilla essence and chopped strawberry in a bowl until combined.
  • Put the bowl in a freezer for around 45 minutes stirring once in between.
  • While the mixture is setting line a pan with an aluminum foil.
  • Place 9 graham cracker halves in the bottom of the pan.
  • Pull the sides of the foil up around the graham crackers so the filling will stay contained on the top.
  • Once the filling is thick, pour it on the top of the graham crackers squares. Use a spatula to spread the filling evenly.
  • Add more 9 graham crackers on top. Place a plastic wrap on top and then place in the freezer to set for around 3 to 4 hours. You can also store it in a zip lock bag in the freezer for a month.
