Day 13 Vegan Recipe Challenge: Zesty Lemon Energy Bites

Here’s to day 13 of my vegan recipe challenge, and for today’s recipe, we’re creating zesty lemon energy bits. These don’t require any cooking, and they’re super healthy. Also, if you’re vegan or you’re trying to consume more plant-based meals, these contain almond flower which is great for protein and selenium.

So, here’s the simple recipe for zesty lemon energy bites.

Ingredients:

- 1 cup rolled oats

- 1/2 cup almond flour (or any other nut flour)

- 1/4 cup shredded coconut

- Zest of 1 large lemon

- Juice of 1 large lemon

- 1/4 cup honey or maple syrup

- 1/4 cup almond butter or cashew butter

- 1 teaspoon vanilla extract

- Pinch of salt

Optional Coating:

- Additional shredded coconut

  • Lemon zest

Instructions:

1. Prepare Ingredients: Start by gathering all your ingredients and lining a baking sheet with parchment paper.

2. Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, shredded coconut, and lemon zest. Stir until well mixed.

3. Mix Wet Ingredients: In a separate smaller bowl, whisk together the lemon juice, honey or maple syrup, almond butter, vanilla extract, and a pinch of salt until smooth and well combined.

4. Combine Wet and Dry Ingredients: Pour the wet ingredients mixture over the dry ingredients mixture. Stir well until all the ingredients are evenly incorporated and a sticky dough forms.

5. Form Balls: Using your hands, scoop out about a tablespoon of the mixture and roll it between your palms to form a ball. If the mixture is too sticky, you can wet your hands slightly with water to prevent sticking.

6. Optional Coating: If desired, you can roll the energy balls in additional shredded coconut or lemon zest for extra flavor and texture.

7. Chill: Place the formed energy bites on the prepared baking sheet and place them in the refrigerator to chill for at least 30 minutes. Chilling will help the energy bites firm up and hold their shape.

8. Serve: Once chilled, your Zesty Lemon Energy Bites are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.

These energy bites are perfect for a quick and nutritious snack on the go, or as a healthy treat anytime you need a little boost of energy.
