I’m not a fan of carrots but this recipe is really striking! Even if you don’t like carrots, you might still like this recipe because all the flavors combine so well. I like to have these as a side dish to go with roasted potatoes and roast tofu (I’m not vegan by the way), I’m just on a plant-based challenge right now, so I’m eating lots of plant-based foods for the next 30 days. You can pair this with roast turkey, chicken, duck, or anything you like.

Here’s the recipe for miso-ginger glazed carrots:

Ingredients:

  • 1 pound carrots, peeled and sliced into thin strips or rounds
  • 2 tablespoons white miso paste
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or tamari (for gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tablespoons water
  • 1 tablespoon sesame oil (optional)
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, grated ginger, minced garlic, water, and sesame oil (if using) until smooth and well combined.
  3. Place the sliced carrots in a large mixing bowl and pour the miso ginger glaze over them. Toss the carrots until they are evenly coated with the glaze.
  4. Transfer the glazed carrots to a baking dish or sheet pan lined with parchment paper, spreading them out in a single layer.
  5. Roast the carrots in the preheated oven for about 20–25 minutes, or until they are tender and caramelized around the edges, stirring halfway through the cooking time to ensure even cooking.
  6. Once the carrots are done, remove them from the oven and transfer them to a serving dish.
  7. Garnish the glazed carrots with sesame seeds and chopped green onions, if desired, before serving.
