Lobiani is basically cooked in an oven, but if you donāt have an oven, you can prepare it in a hot pan. Just heat the pan and cook the bread on both sides.
Necessary ingredients for making Georgian Lobiani bread
Bean intermediate ingredients
Beans (red, chiti or brideās beans, etc.) two glasses
50 grams of butter
Red pepper as needed
Fenugreek seed powder 1/2 teaspoon
Thyme 1/2 teaspoon
Salt and black pepper as needed
Soak the beans the night before and change the water several times and then cook with some water and salt until they are soft and the water is absorbed as much as possible.
Beat the beans with a meat grinder, add butter and spices and mix.
Necessary ingredients for bean paste
Milk or warm water 1 glass
Sugar 1 teaspoon
2 teaspoons of dough
Salt 1 teaspoon
1 egg
2 tablespoons of oil
About 500 to 600 grams of flour

Georgian Lobiani bread recipe
Mix milk or warm water, sugar and yeast and let it sit for about ten minutes to foam on the yeast.
In a large bowl, mix eggs, salt and oil and add to the dough. Add flour gradually and knead until a soft dough is made. Cover the dough and let it rest for two to three hours until it doubles in size.
Heat the oven to 200 degrees Celsius.
Divide the dough into 3 equal parts. Unroll each portion on a lightly floured work surface and place some of the bean paste in the middle of the dough and fold the dough around until the bean paste is completely covered.
Make holes on the dough with a knife or fork to let the steam out and place the dough in the oven tray and bake in the oven for about 15 to 20 minutes or until golden.
After leaving the oven and while the beans are still hot, apply butter and then cut and serve.
