Ingredients:
1 can pumpkin (or 1 cooked sweet potato)
2 ripe bananas
2 eggs
2 cups rolled oats (gluten-free)
1 tsp baking soda
pinch of sea salt
1 tsp pumpkin spice
1 tsp cinnamon
1 tsp vanilla extract
¼ cup pure maple syrup (or raw honey)
½ cup chocolate chips (plus more for topping)
Instructions:
- Combine all your ingredients except the chocolate chips in a blender.
- Stir in chocolate chips in blender.
- Pour the mixture into a loaf pan that’s saturated in butter.
- Top with additional chocolate chips.
- Bake in the oven at 350 degrees F for about 30–40 minutes or until a toothpick comes out clean.
- Let cool for about 20 minutes. Remove from loaf pan, slice and enjoy! 👩🏽🍳💚🫶
