Red Stir-fry

Like much of my cooking, the Red Stir-fry is a product of whimsy and what ingredients I had in my house at the time. It’s beautifully simple and tastes divine.

Ingredients (serves 2, scale as needed): 1 medium or large red onion, 2 large or four small plums, 2 heaped tablespoons of cooked, unsweetened cranberries. You will also need a neutral flavored oil (grapeseed, sunflower) to fry in (about 2 tablespoons). I also like to add a crack of black pepper at the end, but this is optional.

Process: Heat the oil in a frying pan on a medium-low heat. Slice the onion reasonably thinly and add to the oil, taking care that all of the slices are in contact with the oil and pan. Cover, and let cook for about 30–45 mins until beginning to caramelize.

In the meantime, clean, pit and chop the plums into bite size pieces. Once the onions are caramelizing, add the chopped plum and the cranberries. Cook for a further 10–15 minutes. Add some coarse-ground or freshly ground black pepper to taste, and serve.

Optional, but excellent: The recipe above is vegan, but there are some embellishments I like to add which are not: a little bit of butter added in with the fruit is a nice touch, as are both meat and poultry (this is excellent for left overs, as you want to add already cooked meat — again, scale the amount for the number you are serving). If you are cooking meat separately, the red stir-fry also makes a lovely side dish.
