Shattered Potatoes

Take about ten potatoes, neither too small nor too big
Red potatoes are the best, with their taut skins
Even size, about 5 centimeters in diameter
Soon you will know why size is important
Prepare a twelve inch frying pan, cast iron if possible
With a lid, also cast iron, that seals the pan tightly
A napkin or tea towel of stout cloth, a mallet, a cutting board
Two pats of butter, three table spoons of olive oil
Salt, pepper and rosemary to taste as they say
