Vegan yogurt with complete protein
All you have to do is blend tofu, water, salt, and lactic acid. You can also easily make it into a complete protein source, just like meat (see below).
If you have access to Trader Joe’s, you can replicate my recipe below. Otherwise, play with the ratios of the components for the right flavor and texture.
Blend very well for about 1 min (preferably with a Vitamix):
- Trader Joe’s super firm tofu (16 oz) as shown below
- 300 mL of water
- 3/4 tsp salt
- 3 tsp lactic acid
- 3.8 g of amino acid mix (optional), if you want complete protein. The amino acid mix (AAM) recipe is HERE.
Transfer to a 1 quart mason jar or glass Tupperware and place in the fridge.
You can use the yogurt right away, but it will have a creamier texture after it sits in the fridge for an hour or so. It will stay preserved in the fridge for a few days.
I love this yogurt with our home-made granola, but also with a lot of meals.
You can also make fruit yogurts by adding fruit (blended or not).
If you want a probiotic yogurt, just add your favorite probiotics to it.
If you want to fortify it, you can add soy protein and/or your favorite fibers (prebiotics), such as inulin or psyllium.
