Final Idea: PBJ & Co.

A peanut butter & jelly cheesecake oatmeal cookie. I think this recipe is creative because it combines two well known and well loved desserts into a cookie form.

Recipe:

dough —

1/2 cup peanut butter

1 egg

1 1/4 cup quick cook oats

pinch of baking soda

1/4 cup honey

cheesecake fill —

1/2 package cream cheese

1/2 cup strawberry cheesecake greek yogurt

1/4 cup blackberry jelly

  1. mix peanut butter, egg, and honey.
  2. stir in oats and baking soda.
  3. making thumbprints in cookie and bake at 350 degrees for 9 minutes.
  4. cream together cream cheese and greek yogurt.
  5. fill cheesecake filling into thumbprints after baking.
  6. put in freezer, freeze for 1 hr or more.
  7. top with jelly, serve.
  8. store in freezer or refrigerator.

Idea Generation:

A lot of my inspirations came from other desserts or foods, like cheesecake or Peanut Butter & Jelly Sandwiches. I decided to make these foods into cookie form, and combine and modify some of them to make a creative cookie. I narrowed the ideas that I wanted to test down to the Peanut Butter Jelly Cheesecake cookie and the PB Fig Newton.

Idea Test 1:

My first idea was to combine the flavors of fig newtons with something savory like peanut butter. After testing the flavor profile of this cookie combination, I decided it was not worth following through with other additions to the cookie.

Idea Test 2:

My second idea was to make a peanut butter jelly sandwich in cookie form as an oatmeal cookie. By adding a cheesecake type filling, it balances out the savory and sweet. The first time around, I mixed the jelly together with the cheesecake part to make a swirl topping for the cookie. While this tasted good, it did not look very appealing. I also used brown sugar instead.

Iteration:

The second time baking these, I substituted the brown sugar for honey for a more natural, mild flavor. I also decided to go with a thumb print design so that the cheesecake part is more contained and less messy. I added the jelly on top to finish it off. Although it is not the most beautiful, it is certainly delicious.
