You don’t have to leave the United States to get a fantastic cup of coffee from fresh beans – but you might have to travel nevertheless. There has been a resurgence of coffee growing on Maui in the upcountry area and the product is outstanding. Some of the best is sold at the twice-weekly upcountry Farmers Market. My personal favorite is the “rainbow blend” from Olinda Organic Farms. It contains some light roast for fruitiness and acidity, plus some medium to dark for sweetness and body. I love the clean pleasant taste it leaves in my mouth after the last ship is gone. The proprietor is a total coffee nut who is continually experimenting with different yeasts (which assist in the pulping process and impart wonderful flavor notes) and other aspects of the seed to cup process.
