66 and have been eating pho since 1998. i confess, had not heard of it until we moved to sf bay area.

a member of the anti-war tribe in 60's, lived in haight-ashbury vegan communes, begged for veggies from embarcadero markets in 1970, vacation in maine since 1975 and will retire (semi) this year. the thing about pho is that it is made completely fresh, robust herbs, super long cooked broth and fish sauce, cilantro, rice noodles. ahhhh. so love it.

i will attempt pho covered dish anglo dinners after we settle into mid-coast maine where a little bit of lobster in the pho will get other boomers interested.

oh by the way, it takes decades to be able to anecdotally profile wide generational swaths of America — with any modicum of accuracy.

but you will learn after a while.
