Ingredients

2 medium eggplants, about 1 cm thick
Olive oil, about 30 ml
Salt, as required
Garlic powder
Pepper
Sweet paprika, 8g
Dried oregano
1 onion
Olive oil
2 medium peppers
Salt
Garlic, 2 cloves
Meat, 300g
Ginger, 8g
Cumin
Coriander
Parsley
Tomato puree
Water, 150 ml
Mozzarella cheese, 150g
Parmesan cheese, 60g
Oregano

Instructions
Preheat oven to 180°C
Cut 2 medium eggplants into 1 cm thick slices
Brush eggplant slices with 30 ml of olive oil
Season eggplant slices with salt, garlic powder, pepper, sweet paprika, and dried oregano
Bake eggplant slices in preheated oven for 20 minutes
Chop 1 onion and 2 medium peppers
Heat olive oil in a pan and add chopped onion and peppers
Season with salt, pepper, and garlic
Add 300g of meat and cook for 6-7 minutes
Add sweet paprika, ginger, cumin, and coriander to the pan and cook for 10 minutes
Add parsley, tomato puree, and 150 ml of water to the pan
Finish cooking for about 10-15 minutes
Grate 150g of mozzarella cheese and 60g of parmesan cheese
Sprinkle grated cheese and oregano over the baked eggplant slices
Bake in preheated oven for 15 minutes
Serve and enjoy!
