I really like your healthy cookie idea and you considered your cookies more like meals, instead of snacks, of which concepts are usually against each other. Because most of them, “meal” is for keeping all your necessary daily nutrients and make sure you are alive; however, “snacks” are more leaning towards making yourself entertained and satisfied, which means emotionally satisfied weights more than dietary needs. In your project, I can see you are trying to combine those two concepts together that I really enjoy about! I also like your different way of “cooking” your cookies, which also made it very special, because it is typical way to bake them.
I wish you could have kept the cut apple on the top, because it would support your “healthy meal” better, “an apple a day, keep doctor away”. However, there are other solutions to solve the problems you mentioned: maybe the type of apple need to be really serious considered. Honey crispy, is usually sweeter than other types; besides, if you want to make it unoxidized, you can add some lemon juice on it, which will keep your apple as usual.
What if you add more vegetables in your cookies? Because we should have more than 4 to 5 types of choices in each meal to keep daily nutrition balanced and dietary diversity, it could be even better if you have more choices.
