My quick recipe archive — No Butter Chocolate Oat Cookies

Another of my quick easy bake. No mixer required!… which means easier clean up. Airy and soft chocolate cookies. Flavor is very similar to Chips Ahoy (without the chocolate chips) but a fluffier texture that I prefer.

Ingredients: vegetable oil, sugar (brown and white), egg, vanilla/almond extract, baking soda, salt, cinnamon, flour, oats, cocoa powder

  1. Bowl 1: mix vegetable oil [1/2 cup], egg [1], brown sugar [1/4 cup], white sugar [1/3 cup], vanilla or almond extract[1 tsp]
  2. Bowl 2: flour [1 cup, all purpose or whole wheat], oatmeal [1/2 cup], baking soda/salt/cinnamon [1/2 tsp each], cocoa powder [3 tbsp]
  3. Chill in fridge for an hour (you can probably skip this step if you a hurry. This dough spreads more than those with butter)
  4. Roll cookie dough into balls (~1 inch). Press slightly.
  5. Bake at 375 F for 8 min. Cool on counter. Batch is about 20 small cookies.
