Broccoli Soup Ingredients

My granddad has soup everyday before dinner during winters. Even though his staple is a mixed vegetable soup, there are different types of soup that we cook. Broccoli soup was one and it used to be cooked in a water base and sometimes milk was added at the end to make it creamier.

However, for me this changed when my friend Aimée used almond milk for cooking the broccoli (though any milk would do). It is slightly sweet and absolutely delicious. So here is the recipe!

Ingredients

Serves two

  • 1 flower of broccoli
  • 1 onion
  • 1 clove of garlic
  • Milk (about 500ml) — can use almond milk, soya milk etc.
  • Salt and pepper to taste
  • 1 tbsp oil

Process

  1. Heat 1 tbsp oil in a deep pan, add chopped garlic and medium diced onion. Let it cook for 4–5 mins till onions are soft and transluscent.
  2. Add small broccoli flowers to the pan and let them wilt for 4–5 mins.
  3. Pour the milk and let the soup simmer on medium heat for roughly 20 mins
  4. Season with salt and pepper to taste
  5. Blend the veggies with a hand blender
  6. Soup is ready! Serve hot with bread

Options

Can also add spinach along with broccoli
