When life gives you carrots, bake some carrot cake!
Do try it: sift 1cup flour, 1tsp baking powder, 1tsp baking soda, 1tsp ground ginger, 1tsp ground cinnamon in a bowl. Add 1cup loosely packed brown sugar. Beat 2 eggs / flax eggs with 1/2cup oil. Grate 2 big carrots (2 & 1/2 cups grated). Mix all ingredients. Add walnuts if you like. Pour into baking tin, let it rest for five minutes. Bake at 180° for 45 minutes. (For icing either sift icing sugar or use cream cheese mixed with a tsp of vanilla extract & maple syrup to taste, sprinkle walnuts and pistachios on top.)
