It was at the end of a rich Entrecote à la Bordelaise dish in a swanky Brisbane city restaurant when my lightning bolt of realization struck. As amazing as decadent dining was, I couldn’t keep subsisting on cream and butter forever. I was beginning to really want a lettuce leaf.
