Because…meetings are meant for extroverts.

They are designed for extroverts so that they can meet (talk) with other extroverts and hear (talk) what everybody has to talk about.

I am pretty sure the whole idea of meetings was conceived by an extrovert.

On the other hand…an introvert is a different beast altogether.

He/She will never say no (for obvious reasons) to attend these long pie-hole churning marathon meetings but given a choice they will opt out of every meeting opportunity you invite them to.

An introvert is more of a one-to-one conversationalist, preferring to talk with one or a maximum of two people at any given point of discussion. Trust me, they can’t handle more than that. If at all they get caught in such a scenario, they will close themselves and become listeners

What can be done?

The best way to leverage an introvert's thought process is to send out an email in advance to them, describing the agenda and what you expect them to come up with.
