River Cottage: Chickpeas and Spinach.
Sometime ago, just before Edith was born, my good friend Ben introduced me to Hugh Fernley-Whittingstall and the wonders of the show, River Cottage. It inspired me to cook a lot more, and shortly after we bought this book which has been indispensable since.
I found this recipe today for a quick chickpea and spinach mix and thought I’d give it a try. It’s got simple ingredients we generally have on hand, which helps a lot.
It was delicious, served with a few slices of toast.
