Japanese Cookbook 101 — part 10: Salmon Soup

Welcome again to my kitchen! It has felt like an eternity since my last entry in my Japanese Cookbook, but finally I’m here with the jubilee tenth article. I didn’t have anything planned and, to be honest, I didn’t even think I’d return to this series, but then the Laid-Back Camp movie was released on Crunchyroll and they literally gave me the recipe to work with. Not only that, but it’s one of the shows I’m watching with my (at the time of writing) three-and-half-year old daughter. When she asked if we could make it, I had no other choice. Therefore, without further ado, let’s start cooking!

Ingredients

  1. 300 g salmon filets (no skin)
  2. 3–4 medium potatoes
  3. 3–5 small to medium carrots
  4. 1 onion
  5. 250 ml cream
  6. Salt
  7. Dill
  8. Bay leaves
  9. Peppercorns
  10. 1.5l water

Steps

1. Put peppercorn and bay leaves into water and bring to a boil.

2. Add diced onion and carrots, let simmer for about 10 minutes.

3. Toss in diced potatoes and continue cooking for another 15 minutes or until vegetables are soft.

4. Once the vegetables are cooked, add salmon cut to bite-sized pieces, cream, dill, and salt to taste and continue cooking for another few minutes until the salmon is done.

The soup was delicious. Neither the salmon, nor the vegetables overpower the other ingredients. The carrots brought in sweetness, the onion and peppercorns a bit of spice, the potatoes made it a filling dish, the salmon brought umami, and the cream bound it all together. Dill is a hit or miss: I’d say it’s not necessary, but we love it in our home.

As I said in the beginning, I wasn’t certain, I’d be continuing with this series. Let me know, if there is something you want me to try, I’ll give it a shot, otherwise I’ll wait for another fateful encounter like this one.
