Easy Khandvi (Indian Snack) Recipe

Gujarati cuisine is one of the most loved cuisines in India. It is primarily vegetarian with a vibrant list of dishes and desserts for everyone to enjoy. Gujarati snacks such as Khandvi, Patra, Dhokla, Khakra and many more, are widely popular and a constant in most Indian homes.

This is home chef Meenakshi’s simple recipe for making Khandvi. It is basically bite-sized yellow rolls made with gram flour and yoghurt. It is garnished with a tempering and enjoyed with a bowl of freshly made green chutney.

INGREDIENTS:
3 cup Buttermilk
1 cup Gram Flour
2 tsp Ginger-Chilli Paste
Salt to taste
½ tsp Turmeric Powder
2 tbsp Oil
½ tsp Mustard Seeds
3–4 Curry Leaves
¼ tsp Asafoetida
1 tsp Sesame Seeds
¼ tsp Red Chilli Powder

METHOD:
1. Mix together gram flour and buttermilk with the beater. Make sure that no lumps remain.

2. Add salt, ginger-chilli paste, turmeric powder. Stir continuously on low heat for 4–5 minutes till the mixture turns thick and limp. Check by putting a thin layer of the mixture on a flat surface.cool a bit if it rolls then it’s ready.

3. Spread quickly and thinly on flat surface of your clean kitchen platform. Let it cool.

4. Cut into thin strips of 1 inch. Roll each strip and arrange in a serving plate.

5. For tempering, heat oil and add mustard seeds. When it stops spluttering, add curry leaves, sesame seeds and asafoetida. Mix and pour immediately over the prepared khandvi.

6. Finally garnish with red chili powder and coriander leaves.
