Chocolate Chip Cookie Dough Protein Pancakes

Cookie dough pancakes with cookie dough icing on top–doesn’t get much better than that! If you dislike the taste of banana, feel free to sub unsweetened applesauce instead of the bananas for this recipe.

INGREDIENTS

Pancake Ingredients:
– 50g mashed banana
– 45g vanilla whey
– 1/2 tsp vanilla extract
– 46g liquid egg whites
– 15g all purpose flour
– 1/2 tsp baking powder
– Stevia/Splenda to taste

Cookie dough topping:
– 25g mashed banana
– 15g all-purpose flour
– 15g vanilla whey
– Stevia/Splenda to taste
– 7g mini chocolate chips

Common Way
Pancake Ingredients:

– ⅔ of a banana, mashed
– ½ cup vanilla whey
– 1/2 tsp vanilla extract
– 3 tbsp liquid egg whites
– 1.5 tbsp all purpose flour
– 1/2 tsp baking powder
– Stevia/Splenda to taste

Cookie dough topping:
– 1/3 banana, mashed
– 1.5 tbsp all-purpose flour
– 2 tbsp vanilla whey
– Stevia/Splenda to taste
– ½ tbsp mini chocolate chips

DIRECTIONS

  1. In a small bowl, mix cookie dough topping: 25g mashed banana, 15g flour, 15g vanilla whey, and Stevia/Splenda to taste. Add a little water until an icing consistency is reached.
  2. In a large mixing bowl, mix 50g mashed banana, 45g vanilla whey, 1/2 tsp vanilla extract, 46g liquid egg whites, 15g flour, 1/2 tsp baking powder and Stevia/Splenda to taste. Add water until thick pancake batter consistency is reached.
  3. Heat pan on stovetop over medium heat and spray with Pam.
  4. Cook pancakes and serve hot. Add cookie dough topping and mini chocolate chips on top. Enjoy!
