Easy Cheesy High Protein Baked Burrito Casserole

This delicious casserole is perfect for a fun family dinner or party! If your macros allow, you can top it with avocados, greek yogurt (instead of sour cream), fresh cilantro, and a sprinkle of lime juice.


SERVING SIZE: 250 grams
YIELDS: 8 servings


Avatar Way
– 2 lb 99% lean ground turkey
– 280g chopped onion
– 24g taco seasoning
– 70g low-fat Mexican blend cheese
– 320g salsa
– 370g canned black beans (rinsed and drained)
– 6–7 low carb high fiber wraps (I used Xtreme Wellness brand)

Common Way
– 2 lb 99% lean ground turkey
– 2 cups chopped onion
– 3 tbsp taco seasoning
– 1 cup low-fat Mexican blend cheese
– 1 ½ cups salsa
– 1 ⅓ cups canned black beans (rinsed and drained)
– 6–7 low carb high fiber wraps (I used Xtreme Wellness brand)


  1. Preheat oven to 350 degrees F.
  2. Spray pan with nonstick spray and heat stovetop to medium-high heat. Cook chopped onions for 3 minutes. Add turkey and taco seasoning to pan and cook with onions.
  3. Place 1/3 of the turkey/onion mixture into the casserole dish. This will be the first layer. Evenly distribute 1/3 of the salsa over that, then 1/3 of the beans, then 1/3 of the cheese.
  4. Cover the first layer with the wrap. You can tear the wrap into pieces and place over the first layer so that there are no spaces. The amount of wraps you will use for this recipe depends on the surface area of your casserole dish.
  5. Repeat steps 3–4 and then step 3 again. So you will have 3 meat layers and 2 wraps separating the layers.
  6. Bake for 20 minutes at 350 degrees then let cool for a few minutes. Enjoy!
