Here’s a low carb version of one the best breakfast meals in history! Traditionally, huevos rancheros are served over tortillas, so if your macros allow feel free to do so.

INGREDIENTS

Avatar Way
– 2 eggs
– 150g egg whites
– 65g black beans, rinsed and drained
– 30g salsa
– 25g canned diced jalapeno peppers
– 30g avocado
– 14g shredded low-fat mexican cheese
– a dash of cumin
– 1/4 tsp garlic salt
– pepper to taste

Common Way
– 2 eggs
– ¾ cup egg whites
– ¼ cup black beans, rinsed and drained
– 2 tbsp salsa
– 2 tbsp canned diced jalapeno peppers (or less, depending on desired hotness)
– ½ small avocado, chopped
– 2 tbsp shredded low-fat mexican cheese
– a dash of cumin
– 1/4 tsp garlic salt
– pepper to taste

DIRECTIONS

  1. Cook eggs and egg whites with seasonings over stovetop on medium heat.
  2. Plate eggs/egg whites.
  3. Top with mix salsa, jalapeno, and beans.
  4. Add cheese on top and let cheese melt.
  5. Top with avocado, garnish with fresh cilantro and enjoy!
