Luscious Red Velvet Protein Donuts

These look too good to be true, don’t they? They also taste too good to be true, which is even better! If you don’t eat them all at once (like I did), make sure to refrigerate to keep them fresh!

INGREDIENTS

Avatar Way
– 38g chocolate whey (or whey isolate)
– 10g sugar free, fat free chocolate pudding mix
– 14g coconut flour
– 15g cocoa powder
– 1 egg
– red food coloring
– 1/2 tsp baking powder
– 1/2 tsp white distilled vinegar (not necessary but makes it more of a legit red velvet taste)
– Stevia to taste
– water to consistency
– 113g nonfat greek yogurt
– 1/2 tsp vanilla extract

Common Way
– ⅓ cup chocolate whey (or whey isolate)
– 2 tbsp sugar free, fat free chocolate pudding mix
– 2 tbsp coconut flour
– 3 tbsp cocoa powder
– 1 egg
– red food coloring
– 1/2 tsp baking powder
– 1/2 tsp white distilled vinegar (not necessary but makes it more of a legit red velvet taste)
– Stevia to taste
– water to consistency
– ½ cup nonfat greek yogurt
– 1/2 tsp vanilla extract

You will also need a doughnut pan. If you don’t have one, fear not! These can be made as cupcakes too, so a muffin pan will work.

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, combine whey, pudding mix, coconut flour, cocoa powder, egg, baking powder, vinegar, and stevia to taste.
  3. Add red food coloring. You will want to achieve a deep red color.
  4. Add water slowly until you get a cupcake batter consistency.
  5. Spray doughnut pan with pam and fill 6 doughnut holes about 3/4 full.
  6. Bake for 10 minutes. Continue baking and checking on it every few minutes until a you can stick a toothpick in it and it comes out clean.
  7. In another bowl, combine greek yogurt, stevia to taste, and vanilla extract to create icing and ice the doughnuts!
  8. Add red sprinkles, red velvet crumbs, or any other aesthetic finishing touches. Enjoy!
