Home made Pancakes and Bluberry sauce for a romantic brunch with the one you love…

Taking the time to make “from scratch” anything is one way to show love to the people you are cooking or baking for! This morning I decided to make a special brunch for my boyfriend! We were not celebrating anything, but I always like to cook for him and make romantic dinners to surprise him!

A couple of weeks ago we went to a restaurant to eat pancakes, but believe me, the place was crowded, we had to wait for half an hour for a table, the service was awful and the pancakes were just OK.

Today´s pancakes were awesome, fluffy, warm, made with love and delicious!!! The best pancakes I´ve ever had (believe me).

So here goes the recipe!!! Hope you like it!

BLUEBERRY SAUCE:

3 cups of blueberries (frozen or fresh)

1 1/2 cups of water

1/2 cup of sugar

1 1/2 Tbsp of corn starch dissolved in 3 Tbsp of water

In a sauce pan bring to a boil 1 1/2 Cups of blueberries with the water and the sugar. After a couple of minutes when you see the blueberries are starting to break apart, add the cornstarch mixture and the remaining blueberries. Turn the heat to low and simmer for a couple of minutes until the desired consistency. If it´s too thick you can add a little more water.

PANCAKES

1 1/2 cups of all purpose flour

3 eggs

1 2/3 buttermilk

3 Tbsp of melted butter

1 Tbsp of sugar

2/4 tsp salt

1tsp of baking soda.

Mix all the ingredients in a bowl with a whisk until the batter is even with no lumps. Heat a skillet at medium heat and pour the batter in it. Wait until the pancakes are full of bubbles on the top and flip them. As easy as it sounds!

Add the blueberry sauce and decorate it with whipped cream!
